Bananas!!!

If you live in the Cincinnati area, Meijer has bananas on sale this week for .33/lb! It is a good time to stock up for some inexpensive holiday food gifts! Who wouldn't love to receive a loaf of fresh baked banana bread or some chocolate chip banana biscotti to enjoy with a cup of tea???

Here is a little banana story for you! I received a tip (thanks Pam!) this past summer that a store around here has cheap, reduced bananas on Tuesday's. Of course I went and oh boy, I hit the jackpot!! The only problem was that I had just carried in a basket, not planning to find much. I ended up with about 40 pounds or so of browning, spotted bananas on my forearm!

Fast forward a few days...I couldn't figure out why my arm was so sore, like really sore with a big bruise! A few people asked what I did to my arm, I mean it was a nasty bruise! I had no idea what I did, then I realized it was the bananas! I should have went and got a cart, but then someone might have stole all my precious browning, spotted bananas, right? It was worth the pain to make sure they went home with me!!! In case you are wondering, no, I am not at all embarassed about this story. My mom thinks I should be, but I think it couldn't be funnier! Maybe you just had to be there with me and my naners to find the humor???? I am sure the people at the grocery store got a laugh!

Now, I wouldn't advise getting 40 lbs, but I would advise getting some. You can make stuff now (like banana bread or biscotti....)and then freeze for Christmas gifts OR you can mash the bananas and portion into Ziploc freezer bags with the measurements you will need and make later. I have done both, and both work well. I know most of us are looking for ways to cut costs this Christmas; this is inexpensive and most of all it comes form the heart! I will post my FAVORITE biscotti recipe as well as my banana muffin recipe tomorrow. So, go out and get you some bananas!!!

You have inspired me to stock up on bananas and try your recipes. I can't wait to try these with my son. He loves to cook! Do you have any tips on freezing bananas?

Hi Heather!

You can either make your baked goods and then freeze for 1-2 months or you can wait til the bananas are ripe and mash them up and portion them out in the measurement you will need for the recipe. Then just place in a freezer bag. When you are ready to bake just thaw it out.

I also freeze bananas for smoothies. I cut them in small chuncks and lay out on a cookie sheet and freeze just til they harden. Then you can throw them in a freezer bag for smoothies. If you guys like peanut butter and bananas my favorite recipe for a smoothie is:
1 cup milk
1 cup frozen bananas
1 tablespoon peanut butter
makes about 15 ounces
