Buttermilk

Buttermilk is something I had never really purchased. I never felt like I could use it all, so why buy it and waste it. I recently realized that I should buy it when it is on sale and freeze it. I don't know why I have never thought of it. My favorite pancake recipe calls for 1 cup of buttermilk, so I froze 1 cup portions in freezer bags.

If you don't want to buy it, you can always do what I did for years. If a recipe calls for 1 cup of buttermilk, you put 1 tablespoon of vinegar in enough milk to equal 1 cup. Stir and let it sit for 5 minutes and it is ready to use.

1 Tbs of lemon juice in 1 cup of milk works too. Also, I started buying powdered buttermilk. It works wonderful!

I had no idea you could freeze buttermilk! And I consider myself to be fairly knowledgeable about items that can be frozen. Goes to show you can learn something new every day!

I only use buttermilk for homemade biscuits and pancakes. For the pancakes, I use powdered buttermilk. It's still a little pricey, but you only have to use the amount you need.
