Cauliflower Salad

I think you all know by now that...I.LOVE.SALAD! You will see it on my menu plan a lot.

If I had to widdle it down to my most favorite-ist salad in the whole wide world, it would be hard, but this Cauliflower Salad would win! Unfortunately for me, I did not discover this salad until I was 18, when I began dating my husband. Daniel's mom and grandma make it for most family gatherings and I am not complaining one bit.

If I am going to eat seconds, this is what I eat! Ok, who am I kidding...it isn't if...because I always eat two bowls of this yummy salad! There is just a combination of all of my favorite things in it!

Hopefully you saved room on your Easter menu for one more thing...if so, this is what you should try!

1 head lettuce
1 head cauliflower
1/2 onion, diced
2 cups cheddar cheese, shredded
1 lb. bacon, cooked and crumbled
2 cups mayonnaise
1/2 cup sugar

Chop lettuce, cauliflower, and onion. Mix together and let sit.

Mix mayonnaise and sugar and let sit.

When ready to serve add cheese and bacon and mix in dressing.

This looks really good. :) I am pretty sure I have tried something similar before but with brocoli?!? I could be wrong... I will definitely have to give this a whirl.

Now that's what I call a salad! I love slightly sweet dressings on my salads so this looks perfect!
