Menu Plan Monday

Here is my proposed menu for the week. I am trying to keep with just vegetables and salads for side potatoes or rice. Man, it sure is difficult to stick to that! Oh well, I guess if it is good for me I can get used to it!

Monday- Dinner with Family
Tuesday-Chicken Enchilada Soup, Salad
Wednesday-Spinach and Cheddar Pie, Salad
Thursday- Balsamic Roast, Veggies, Salad
Friday-Orange Teriyaki Chicken, Veggies, Salad
Saturday-Out to Eat
Sunday-Pineapple Green Chile Pulled Pork Salad

Your pulled pork salad sounds yummy! One thing I love about your blog is you truly de-bunk the myth that eating healthy has to be expensive... :)

Your Chicken Enchilada Soup sounds delicious! Why are you avoiding potatoes and rice? Is it because of the carbs?

Misty, I will be posting the recipe for the pork this week! It is soooo good! I love that the recipe makes a ton (several dinners for you) and freezes well! I use it for tacos, quesadillas, and salads!

April, I am trying to do the South Beach diet. I really have to give up all bread and rice for two weeks. It is hard, but I have had good results when I have stuck to it before!
