Frozen Fruit Cups

I posted a picture of these refreshing fruit cups on my last freezer cooking day. Everyone much be excited for spring and some fruity cups because I got a lot of people asking for the recipe...so I am sharing it today. They are awesome and you can switch up the fruit to what suits your taste.

I have realized this year that time estimation on projects is not my thing.

Let's be honest. Estimation of any kind is not my gift.

Want some recent examples?

1.) The game where you guess the amount of something in a jar. Yeah, I was way off on the jelly beans in a jar. Way off. Way, way off.

2.) How much room I have between my car and the curb. Yep. You guessed it. Bumped the curb. Hope my husband just skims this post. Yikes. It was his car.

3.) Then there is the idea of making recipe books for a few brides in my life. The book isn't the issue. It was the genius idea of buying recipe card stamps and making them. Stamping each card. Stamping each category on each stamped card. Cutting many sheets of card stock. Yes, stupid me.

4.) How long it will take to completely redo a lot of my house. Yep. Missed the mark.

As a result I haven't had much time to blog. I hope you understand. After I get this house completed it should be back to normal. While I have been feverishly working on everything around here lots of recipes/post ideas have been stirring around in my silly little poor estimating mind. Simply no time to do anything but write them down.

One thing that is not a post idea is teaching YOU how to master the great skill of proper estimation.

Frankly, I need help with it. I really wonder if there is hope for me...




Ingredients:
20 oz. frozen strawberries, sliced and thawed
12 oz. frozen orange juice concentrate, slightly thawed
2-20 oz. cans crushed pineapple
1-16 oz. can mandarin oranges
1/3 cup lemon juice
6 bananas, sliced

Directions: Combine all ingredients, including juices from fruit. Spoon fruit into lined muffin cups and freeze. Once fruit is frozen place fruit cups in freezer bags.

Serving: Remove from freezer about 30 minutes before serving

Makes about 30 cups

Hi Katie,

I missed you blogging but sure understand! I was always amazed at how my she would use the right size container to serve or save food. She told me it was just experience. I am sure you are well on your way to the "gift of estimation".

The fruit cups is a definite try for me especially since strawberries are in season and sooo good.

Loving these fruit cups!! I am also not good at estimating!! I had to laugh because I have done a few of the things you had (atleast you didn't ruin the tire like someone I know.) Thanks for an amazing recipe and we will all still be here when you get the time to blog!! You are amazing!

I am totally in love with this idea. I have been trying to get more fruit into my kids without buying all that prepackaged stuff. I can't wait to try this. I hope you don't mind, but I am going to share this on my blog, cuz it is just so cool and timesaving and healthy!!
