Pumpkin Bars

(This is a repost from last November...since pretty much nobody read back then I decided it deserved some attention because it is a great recipe! Whew...it is taking a lot of power to not erase and rewrite everything I did when I first writing. I posted this in pretty much my first week or so of blogging...)

I made Paula Deen's pumpkin bars for the first time last week! I absolutely LOVE Paula! She is so awesome, and my dream is to meet her. I even went to her wonderful restaurant in Savannah, Georgia, but unfortunately she wasn't there. I was so bummed, but maybe my dream will come true one day! I just love her style of cooking, it is totally what has inspired me.



Bars:
4 eggs
1 2/3 cup sugar
1 cup vegetable oil
1 - 15 ounce can pumpkin
2 cups all purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda

Icing:
1 - 8 ounce package cream cheese
1/2 cup butter or margarine, softened
2 cups powdered sugar
1 teaspoon vanilla extract

Directions:
Preheat the oven to 350 F

Using an electric mixer at medium speed, combine the eggs, sugar, oil, and pumpkin, until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a 10x13 inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.

To make the icing: Combine the cream cheese and the butter in a medium bowl with an electric mixer until smooth. Add the powdered sugar and mix at low speed til combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.

* I didn't have a 10x13 pan (I don't have one ), so I used a 12x12 cake pan. You could also use a 9x13, but you will likely need to increase your bake time.

I LOVED the pumpkin bars at Kimery's party. I can't wait to bake them for work next week. I think that they will love them as much as much as I do. One of my new favorites!!!!!

I saw these last week and will definitely be making them for Thanksgiving this year! I thought about using cookie cutters and cutting these out in cute shapes, what do you think about that? Also, how long do they stay moist? Thanks!!

Cookie cutter is a great idea. I am thinking cute little pumpkins...I may have to do that this Thanksgiving when I make these!

They stay moist for a few days in the fridge!!
