12 Days of Christmas "Cookie Style"-Mexican Wedding

Mexican Wedding Cookies

These little cookies are called so many different things. Russian Tea Cakes, Snowballs, Snowdrops...whatever you call them, they are some good cookies! They are really easy to make and freeze great. If you make them now to freeze just place them in a freezer bag. When they thaw roll them in more powdered sugar.

1 cup butter or margarine, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cup all purpose flour
3/4 cup chopped nuts
1/4 teaspoon salt
powdered sugar

Heat oven at 400.

Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts, and salt til dough holds together.

Shape into 1 inch balls. Place 1 inch apart on ungreased cookie sheet.

Bake 10-12 minutes or til set but not brown. Immediately remove from sheet to wire rack. Cool 5 minutes. Roll warm cookies in powdered sugar again.

Makes 4 dozen

Family favorite cookie for 30 plus years. I never even thought about freezing! We never have any left. We called the cookies Melting Moments. Katie, I really enjoy your blog. It is part of my morning routine now.

I never thought of freezing these either...I'm excited!!

My friend, Heidi and I used to make these and...boy are they DEE-LISHUS all nice and WARM from the oven!!

I'm DEFINITELY going to do some and FREEZE for future use.....just think...when Chuck is at work and I NEED a snack...pop 4 or 5 of these lil guys in the oven...MMMMMMMM...makes me want them RIGHT NOW!!!!

Do you freeze them before or after you bake them? I am assuming after you bake them you freeze them and is that true of other cookies as well? I know you can freeze cookie dough,is that true of all cookie dough?

Cassie is wanting some special cookies at her bday party. Her bday is on Christmas so we try to have party as close to that day as possible. She wants party on Christmas Day but that is hard even the day after is hard. I don't think I will have time to bake for her the day after, was thinking I could freeze a few things and just pop them out for the party?????

Heather,
I prertty much always bake my cookies and then freeze in a freezer bag. They don't take long to thaw out at all. The only thing is with my sugar cookies, I bake and freeze unfrosted then frost after they thaw out. With the mexican wedding cookies I bake and roll in powdered sugar then freeze. When we are going to eat them, I take out of freezer and roll in more powdered sugar.

I would make the cookies ahead of time for Cassie. I do it all the time, and they will taste just as good!

You can also freeze the dough uncooked. It works for sugar dough, chocolate chip, peanut butter and things like that. The only time I ever do this is when I make chocolate chip cookies or something for us. I will drop balls on cookie sheet (like you are going to bake) and place in freezer just til firm. So they don't stick together. Then I will put them in a freezer bag. Just bake frozen, but it may take a few extra minutes.

Thanks so much. I just made Mexican wedding cookies last night and froze them....I made Cassie's dough for her cookies and I am going to bake those and freeze as well. I am sooo excited because for the first time in years I am going to be able to have homemade cookies and candies for Christmas without the stress of an all day baking session that I dont have time for. To do it in small increments has been great! You have inspired me. What about the candies is any of it freezeable?

I have read that you can freeze the caramels. I am not sure about other candy. I have not done so, because they are fresh for several weeks. You could go ahead and make them up now, and they would be fresh at Christmas. Just store in an airtight container! It does make it so much easier to do your baking in small amounts!
