Menu Plan Monday


Monday-beef enchiladas, Mexican rice
Tuesday-beef roast over noodles, peas, salad (didn't get to this last week)
Wednesday-family in town
Thursday-turkey and biscuits, salad
Friday-out to eat
Saturday-out to eat
Sunday-company for dinner (not sure what I am making????)

Kids loved your recipe for chicken chimi's. I notice your beef enchilades. Would you care if I ask what your recipe is for that and is it one you freeze as well?

Heather,they are so easy to make. I don't know exact measurements...you just kind of have to wing it.

You brown ground beef with a little onion. Once it is browned you add some red enchilada sauce to the mixture. You place some in a tortilla and roll up and place in a greassed baking dish seam side down. Once the pan is full you pour the rest of the enchilada sauce over them and sprinkle with cheese. Bake at 350 for about 20-30 minutes.

They do freeze great! I prepare up to baking point and cover dish with saran wrap and foil and freeze. When we are ready to eat them I let them thaw and then continue with the baking instructions.
