Chinese Style Broccoli

After sharing about a bad vegetable recipe this week, I thought I would share a good one! I don't know about you, but it is hard for me to come up with different ways to cook veggies. It seems like I always just steam them, and while that is good it does get old after a while!

This recipe came out of a South Beach Diet Cookbook, it is healthy but very good! It really did remind me of something that you would get at a Chinese Restaurant, but better! I served this with a steak, but it would be great with another Chinese dish.

My sister gave me a wok for Christmas, and I was so excited to get to try it out. If you don't have a wok, it is no big deal, just use a skillet!

1 tablespoon plus 1 teaspoon canola oil
1 (1 1/2 pound) head broccoli, cut into florets (6 cups)
2 tablespoons low-sodium soy sauce
2 garlic cloves, minced
2 teaspoons fresh lemon juice

Heat oil in a large wok or high-sided skillet over medium-high heat. Add broccoli and stir-fry for 2 minutes. Add soy sauce, garlic, and lemon juice; continue to stir-fry until broccoli is crisp-tender, about 5 minutes. Serve hot.

Serves 4

Great recipe. When vegetables are made flavorful, they are always a great part of the meal.
Great post.
