Last week while at Meijer, I spotted some beautiful strawberries! They were bright red and looked like they were bursting with flavor. Now, while I love strawberries, especially on a salad, I never buy them in the early spring.
You can probably figure out why...they are expensive! This year I have seen them significantly less expensive. I have been racking my brain to figure this out. I know my prices, and know this is unusual.
Last night on the news, my question was answered! Supposedly California and Florida's berries all ripened at the same time, so the market is flooded. I knew there had to be a reason for this.
Ok, on to the salad. This is really just something I threw together, but the dressing is what makes it...in my humble opinion. There are so many things you could do to this salad. You could serve it as just a side salad, change the fruit up, add chicken. It makes a nice light and easy dinner when you are on the run!
Here is what I put on my salads:
Baby Spinach
Bacon, cooked and diced
Strawberries
Gorgonzola Cheese
Pecans
Mushrooms
Honey Poppy Seed Vinaigrette
1/4 cup olive oil
1/4 cup honey
2 tablespoons apple cider vinegar
1 1/2 teaspoons poppy seeds
dash of Worcestershire sauce
Put the dressing ingredients in a jar and shake it up. It is best to make it the morning of and let the flavors really come together.
The dressing yields 4 servings

YUM! Im going to have to try that dressing. I've gotten into a balsamic dressing rut!
I make balsamic all the time, too! I love it but it does get old!
Lately I have just been on a salad dressing making kick!

This looks and sounds so delicious. Stawberries are so good in salads. The dressing sounds just like one I have been searching for. I will be trying this out. Would love to have your balsamic dressing recipe also. I have been into balsamic vinegar lately. Thanks!! Now I have to clean up the drool off my keyboard. So wish I could have lunch with you!

Here is the recipe I use for my balsamic dressing...
1/3 cup balsamic vinegar
2/3 cup olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon grated parmesan cheese, optional
