Kitchen Tip - Using Leftover Veggies

Do you ever have leftover veggies?

We often eat the steam fresh bags and there is too much for the two of us. Instead of trying to eat them up the next night, I have been freezing them. I put them in a Ziploc container and add to it whenever I have leftovers. When I get enough I make vegetable soup! It beats throwing them in the trash!

I to toss my leftover veggies in a old ice cream bucket that I keep in the freezer. When it's full, I make veggie soup. I hate throwing food away.

Great idea. My husband grew up on leftover veggie medley. What was leftover from the previous night was added to the new ones. So it grosses him out to use leftover veggies. So this is the PERFECT solution. Thanks!

This is such a great idea. I need to start doing this when I have leftovers. Too often it's not enough worth saving for the next night and it gets tossed.

I have plenty of homemade vegetable stock in my freezer, so this is a perfect use for it! Thanks for sharing!

We always make veggie omelets with any leftovers. I do like the idea of having a container in the freezer at the ready for soup, though!
