Parmesan Corn on the Cob

I know, I know...this combination sounds strange, and maybe even downright nasty to some of you!

Mayonnaise on corn?

I promise I have not completely lost it, this corn is amazing. You are going to have to trust me on this one. Once it has cooked you really don't taste the mayonnaise it at all. All the flavors blend wonderfully together!

This is my favorite way to grill corn. I have been making this for years. This would be the perfect recipe to add to your cookout this weekend!


1/2 cup mayonnaise
5 ears of corn, husks and silks removed
1 cup shredded Parmesan cheese
Chili powder
1 teaspoon salt
1 teaspoon pepper

Brush a thin layer of mayonnaise on the ears of corn. Sprinkle the corn with cheese, chili powder, salt, and pepper. Wrap each ear of corn with foil and place on grill. Grill for 10 minutes. Serve warm.

This is a GREAT way to eat corn on the cob. It's so popular in Chicago that people sell them from street vending carts. Thanks for reminding me about this wonderful dish, I'm adding it to my Fourth of July BBQ.

April, I didn't realize that they make it this way in Chicago. I tell you, Chicago knows how to eat!!

Katie, I know you weren't talking to me and my "picky eating habits"... haha! I still can't wrap my mind around mayo on corn... but like the pepper jelly, I promise I will give it a whirl! :)
