Summer Corn Salad and Garden Update

Remember how I planted a garden this year? I wanted to give you a little update...

Well, it is like the most amazing thing ever. I can't believe how much joy it has brought me, and it really hasn't yielded much yet. I go out there every day, sometimes twice, just to check it out.

I. Pull. Weeds...All. The. Time!!!

I also use the hoe, or I try to use it but I am unsure of what to do with it. (Please don't laugh, I really don't know what purpose it serves...I just know that people hoe gardens?!? )

I can go out in the morning and see yellow flowers on my zucchini and squash plants and later that night there is as 3 inch vegetable growing behind the flower. These things really grow before your eyes, it is so cool to watch.

My neighbors probably wonder what is going on when they spot me, hoe in hand, jumping for joy! It is just that exciting to see new sprouts of life.

My tomato plants are growing, too, but, they require a lot of patience. I have one tomato that is turning from green to yellowish-green, so I think he is going to be the first to ripen. Or, perhaps, he is dying?!?

See, the problem is that I am a "city-ish" or better yet, "suburban-ish" girl...and I have a lot to learn about all this. It is going to be a long road I am afraid!



On to this wonderful salad I created last week! This is unbelievably good, so good that I ate it all myself...over a few days! I can't wait to try this with my own tomatoes...

4 ears of corn
1 cup cherry tomatoes, halved
1 cucumber, chopped
1/2 cup red pepper, diced
1/2 cup vidalia onion, diced
1/2 teaspoon dried basil
3 tablespoons olive oil, divided
1/2 of a lime, juiced
1/4 teaspoon salt
dash of hot sauce
1/4 cup feta cheese

Cut the corn off of the cob. Saute in 1 tablespoon olive oil.

Mix together salt, 2 tablespoon olive oil, lime juice, basil, and hot sauce.

Combine corn, tomatoes, cucumber, red pepper, onion. Toss with dressing. Top with feta cheese.
(If you aren't serving right away, store in refrigerator and hold the cheese until serving time!)

Garden's are a joyous thing! I can go out to my garden stressed out and in a bad mood,and by the time I have weeded and bonded with my plants I am a happy girl,again.

Katie, I will ask John to introduce you to a hoe. I don't want to learn:) This salad looks wonderful and I am looking forward to trying it.
