Cranberry Crumb Bars

I can't recommend this cranberry bar recipe enough...these bars are absolutely delicious and very festive! I was a little hesitant that it may be a little overwhelming with a little too much cranberry tartness going on, but I was wrong. They are delicious...not too tart or too sweet!

Last year I took them somewhere where the majority of people were not cranberry fans. They never asked what they were, so...I didn't tell! I left with an empty plate, so I think even the non-cranberry lovers became fans of these yummy bars!



The Dough:
1/2 cup whole wheat flour
1 cup all purpose flour
1/2 teaspoon salt
1/2 cup plus 2 tablespoons (lightly packed) brown sugar
1 1/2 cups quick cooking oats
1/2 cup walnuts, chopped small
12 Tablespoons (1 1/2 sticks) unsalted butter, melted
1 tablespoon hot water

The Filling:
3/4 cup raspberry preserves
2 1/4 cup fresh cranberries

Preheat the oven to 375 degrees. Lightly grease a 9 inch square baking pan with butter.

Make the dough: Place all of the dry ingredients in a medium sized bowl, and stir with a spoon to mix. Add the melted butter and toss with the dry ingredients to incorporate.

Take a little more than half of the dough and press it into the pan. Bake on the middle rack of the oven until golden, about 14 minutes. Then remove the pan from the oven, but leave the oven on.
Meanwhile, add the hot water to the remaining dough and toss with a fork to distribute. Set aside.

Prepare the filling: Mix the preserves and the cranberries in a medium sized bowl until the berries are evenly coated.

Distribute the berry mixture over the baked base. Spread it so that it evenly covers the base. Crumble the remaining dough over the filling. Return the pan to the oven and bake until the top is golden and the filling is bubbling, about 45 minutes. Cool completely in the pan on a wire rack.

Makes 16 bars
