Meat Loaf Supreme

I love good old All-American food. In my opinion, it doesn't get much better than the often overlooked meatloaf served with mashed potatoes. I don't understand. A meatloaf is simply awesome and there are so many variations that can be made. In my recipe collection alone I have about 4-5 recipes for meatloaf and I love them all for different reasons.

I posted my
barbecue turkey meatloaf a while back. I am thinking I need to whip up the others and get them on here as well one day. A while back I went a little overboard on stockpiling the dry onion soup mix. I guess you could say I overestimated our need. I looked on the back of the package for some recipe ideas and low and behold there was this gem of a recipe!






Ingredients:
1 envelope dry onion soup mix
2 pounds ground beef
2 eggs
1/4 cup water
2/3 cup ketchup
3/4 cup dry bread crumbs

Pre heat oven to 350 degrees. In a large bowl, combine all ingredients, mix well. In a large shallow baking dish, shape into a loaf. Bake 1 hour.

Serves: 6-8

This is pure comfort food to me. When I was little I would ask for meatloaf and boiled cabbage... Oh my, my mouth is watering.

I am a little weird when it comes to meatloaf, I do not like Ketchup on it at all... Waitresses always look at me funny when I ask "Do you all make your meatloaf with ketchup?" If yes, then I pass.

I make mine exactly like this recipe MINUS the ketchup and we serve it with A1 sauce... Weird, I know, but what can I say? It's DELISH!!!! :)

This is my go-to recipe! I like to make it with the beefy onion mix and use BBQ sauce in place of the ketchup. I like mine a bit on the firm side, so I use 1 cup of breadcrumbs (usually seasoned). I have made it with just about all of the different flavors of dry soup mix. My DH likes the garlic/herb and ketchup combo the best. And I always mix the ketchup/BBQ in with the mix so the flavor goes throughout.

You know, I hate meatloaf with ketchup on top. I can't stand ketchup so it makes sense...but putting it in the meatloaf is different. This was the first time I had tried it that way and it was awesome and didn't taste ketchup-ey :)

So, you aren't strange to me at all! I really like it with barbeque sauce, too! I know I would enjoy A1...I love that stuff!!

I love meatloaf and mashed potatoes. This recipe for meatloaf sounds delish!! I crumble two slices of whole wheat bread and 2 tablespoons of ground flax seed into my meatloaf to up the fiber. I have to be sneaky with how I get my family to eat more fiber! :D

Thanks for all of the variation ideas. I will have to try different soup packets! I loved the ketchup throughout...it gave it so much more flavor...as did the onion soup mix!

I like meatloaf pretty well...but I've made some pretty yucky ones too!!!

I've never done the soup mix thing and am looking forward to trying it....I just made it the way Chuck's mom did...and...yes...it always had ketchup in it!!! Chuck says she always put tomato paste on top instead of ketchup...but I don't remember that....!!

My problem always comes in the "texture".....sometimes it is basically just meat crumbles in a pan!!! LOL Still tastes good....but not firm AT ALL!!!

Meat crumbles in a pan?? That is too funny! You have to try the onion soup in it. It gives it so much flavor...and I guess I am just a huge dry onion soup fan.
