It is going to be a busy week again! There is stuff going on every day...so I hope I can stick to my menu plan, and not resort to eating out.

I didn't get to my ham on Sunday, so I am making it Monday night. I anticipate a lot of ham sandwiches for lunches this week! Anyone have any good leftover ham recipes? If so, I would love to hear them...

Monday-Ham, Garlic Green Beans, Salad
Tuesday-Barbecue Turkey Meatloaf, Cauliflower, Broccoli
Wednesday-Ham and Cheese Frittata, Salad
Thursday-Cobb Salad
Friday-Out to Eat
Saturday-Graduation Party, out of town
Sunday-Honey Lime Chicken, Veggies, Salad

my favorite way to use leftover ham. Take a bag of frozen hashbrown potatoes, about 1/2 bag. left over ham about a cup chopped or you may add more to our liking. a bottle of your favorite bbq sauce. Thaw your hashbrowns, brown them in a skillet add seasonings to your liking. ( I use s and P and onion powder. Add the ham when the potatoes are brown for a few min. Then add the bbq sauce and top with cheese/ enjoy!!!

That sounds like a great way to use the ham up. If I have enough left I will make this, if not, I will next time. My husband keeps sneaking in and eating it all up...but i guess that is what it is there for!
