Hawaiian Chicken Salad

Let me just preface this post by letting you know that I am totally in love with chicken salad.

It is such a prissy girl food...and although I am not a prissy girl, I sure do love my prissy girl chicken salad!

I have several wonderful chicken salad recipes that I cling to, but I think this one has climbed it's way to the top of the list. I love the sweet yet tangy flavor that the pineapple renders. It really adds a lot of flavor without being over the top.

Oh, and for all of you chicken salad loving dude's...it's alright...your secret is safe with me!



4 cups cubed cooked chicken breast (4 large breast or 2 cans)
2 cups diced celery
1 cup mayonnaise
1 cup sliced almonds
1-20oz. can pineapple tidbits, drained
1 pound seedless grapes, cut in half

In a large bowl, combine the chicken, celery, mayonnaise, and almonds, and mix well. Gently fold in the pineapple and grapes.

Serves 8-10

These are so yummy! I have been meaning to ask you for the recipe, as I have NO idea how to make chicken salad, so I was SUPER excited to see the post today! YIPPEE!!!! Definitely will be giving these a whirl SOON!!!

I'm kind of confused about folding in the "oranges"? Did I miss something?

The recipe in the cookbook called for oranges...I leave them out. When I was typing it up late last night I guess I wasn't paying enough attention?!?!

Me, too ... big, big fan of chicken salad. I put mandarin oranges in mine with sliced almonds. Yum!

Yummy! I experimented with a tropical chicken salad and put shredded coconut, macadamia nuts, oranges, pineapples and Jerk seasoning. Pretty good but I don't know if I could recreate it again. Also, you asked me about my squash gratin recipe...I used the Williams and Sonoma one and it turned out great!

Made this last night to enjoy after bible study (and for lunches this week). I made 1/2 the recipe and oh how my fork keeps making it's way into the fridge... :) This ranks right up there with Panera's Chicken Salad you got me hooked on. :)
