Topsy-Turvy Apple Pie

Last week there was an occasion that called for a celebration.

My parents celebrated their 30th wedding anniversary!!

We stopped over bearing this wonderful apple pie.

(Am I a wonderful daughter, or what?)

I reluctantly strayed away from my old faithful recipe, but this new recipe did not disappoint.

This was a really fun pie to make. It was easy, different, and I love that it is served upside down. I was really nervous when it came time for the big flip, but it came out of the dish so easily...I was amazed.

Apple pie season is on us...and this is a must try!

Glaze and Crust:
1/4cup packed brown sugar
1tablespoon butter, melted
1tablespoon corn syrup
1/2cup pecan halves
1 box refrigerated pie crusts

Filling:
2/3cup granulated sugar
2tablespoons all-purpose flour
1/2teaspoon ground cinnamon
4cups thinly sliced, peeled apples (4 medium)

Directions:
1. Heat oven to 425°F. In 9-inch glass pie plate, mix brown sugar, butter and corn syrup. Spread evenly in bottom of pie plate. Arrange pecans over mixture. Make pie crusts as directed on box for Two-Crust Pie, placing bottom crust over mixture in pan.

2. In small bowl, mix granulated sugar, flour and cinnamon. Arrange half of apple slices in crust-lined pie plate. Sprinkle with half of sugar mixture. Repeat with remaining apple slices and sugar mixture. Top with second crust; seal edge and flute. Cut slits in several places in top crust.

3. Place pie on sheet of foil on middle oven rack in oven; bake 8 minutes. Reduce oven temperature to 350°F; bake 35 to 45 minutes longer or until apples are tender and crust is golden brown. Immediately run knife around edge of pie to loosen. Place serving plate upside down over pie; turn serving plate and pie plate over. Remove pie plate. Serve warm or cool with whipped cream.

Kimi,

Yeah, you don't want to know how many calories are in this pie....VERY scary!

Best to make it, eat one piece, and share with the firehouse!!!!!

WOW, this looks yummy! Can you teach Rylee to make this, so she can bring it to us for our 30th anniversary? :)

Misty,

I am sorry, but I think Rylee will want to come over here and make you cake :) She is more of a cake decorator than a pie baker.

Rylee and her cake...she is too funny :)

I gotta try it!!! Maybe I'll make it for dinner next week at Mamaw's!!!

I've got some apples in the freezer that would probably work pretty good!!!

Hmmmm...I thought I left a post the other nite...but it's not here...I probably hit a wrong button...SIGH....it was a LONG comment too!!!!

I was just re-visiting the lovely apple pie...and drooling!!!!

Yes kate....you can freeze apples....I just peel and quarter...then slice off the core part....if you are going to make apple sauce...just leave in quarters b/c they will cook down.

Slice if you are going to do pies or crips.

They will turn a little brown...you can put some of that fruit stuff or lemon juice on them if you like....but I don't....I don't really care if they turn...b/c they are going to be cooked w/cinnamon...so they will be brownish anyway...right???? LOL

Crisp, tart apples are the best for freezing.

Back in Sept. I got about 20 lbs. from the apple farm across from Mamaw's road....they were early apples so they were kinda smallish...so you have more waste that way...bummer!!

Out of that 20 lbs....probably 10lbs. were waste (peelings and cores).

BUT...I got 5 qt. bags of red apples and 5 qt. bags of green apples. and 3 gallon bags of applesauce apples.

Used 1 1/2 bags to make applesauce for Sunday dinner one day...it made enough for all 14 of us and a decent size bowl left over!!!!

Running....for FUN??? How can ANY running be fun???? Blech...I hate running!!!! I pretty much hate ANY type of aerobic exercise!!!

You go girl!!! Better you than me!!! LOL

Hugs,
Cherie

Cherie,

I am going to try the freezing for pies and stuff! Maybe I will post about it?!?

Well, I wouldn't say that I am running for fun. I go and run 3 miles and then hop on the bike for 10 miles in effort to lose weight but it isn't working AT ALL. I would think that an hour workout like that would show some kind of results besides inches lost?!?!

I will say that after 6 weeks of going all the time it is a habit and I actually enjoy it kinda.

Thanks for the tips!!!!

Wow Katie! I'm having fun reading your blog! You've really grown up! Just to think you and Kimi would make me crazy when I babysat you!

Tell your mom and dad Happy Anniversary! That really is a milestone, and I'm proud to say that growing up with your family was wonderful! Your dad was a great friend to mine, and I really appreciate that! :)

Keep up the good work! I'll be checking in after my diet is over! Aghhhh!
