Menu Plan Monday

I am totally not into planning a menu this week. Saturday we are headed out to sail the high seas to celebrate our anniversary, and my mind is already on vacation. Visions of snorkeling and beaches have taken over my thoughts of menu planning. I am already scared to death to zip line through the tree tops of Roatan. Has anyone ever done this...please tell me I won't die!?!? I am scared I will get there and chicken out...or someone will have to push me off of the stand.

This week I don't want to buy a lot of food since we will be out of town, so I am trying to eat as much from the freezer/pantry as we can! I will be doing a thorough freezer inventory early this week, so I know I will find a lot we need to use. Freezer inventory is the last post in the freezer cooking series...you can look for it later this week (I hope).



Breakfast: Crock Pot Oatmeal, Cereal, Fruit
Lunch: Salads (most days are actually lunch dates with friends this week)

Dinners:
Monday- Dinner with Family
Tuesday-Chicken Parmesan (freezer), Veggies,
Wednesday- Harvest Pot Roast, Veggies
Thursday-Skillet Lasagna, Salad
Friday-Out to Eat
Saturday- Vacation!!!!!!

I have never done the zip line but I am sure you won't die... haha. It'll be so much fun! You'll have to post ALL about it. :)

Coming over from OrgJunkie. I am NOT adventurous at all! I ziplined in Hawaii this past summer. Very fun! Just let go and enjoy it!

First- I referenced you today on my blog in a comment. Someone asked for information on freezer cooking, and you were my source.

Second- Zip lining is amazing. I'm TERRIFIED of heights, and they do a lot to make you feel real safe. We were always double hooked to the line and the guides were very careful and followed protocol on everything. It's a lot of fun. You'll really enjoy it.

I ZIP LINED WE WENT TO ALASKA LAST SUMMER. IT WAS PRETTY COOL TO BE IN THE TOPS OF THE TREES OF THE RAINFORSET. HEART JUMPED A LITTLE WHEN WE SAW BLACK BEARS....HEART ALSO JUMPED A LITTLE EVERRRRRRY TIME I JUMPED OFF OF THE PLATFORM. I AM NOT BIG ON ADVENTURE BUT DECIDED THAT ALASKA WAS A ONCE IN A LIFETIME TRIP SO I SHOULD DO ONCE IN A LIFETIME ACTIVITES. IT WAS COOL. I WAS SCARED, BUT I DID IT! YOU WILL BE GLAD THAT YOU DID IT. ENJOY YOUR TRIP

Thanks for the encouragement. I have to do it...it has been booked! There is no escaping now. I saw pics of little 10 year olds doing it...I will be the laughing stock of everyone if I act like a big baby!
